COOKING SLOW MEANS COOKING WITH FLAVOR

I like to cook but am not an amateur chef. Still, I like to cook. So when I find a cookbook that looks interesting, I at least consider acquiring it. Thus this book, which I bought in anticipation of cooking for Christmas 2013. To date (February 5, 2014), I have tried four recipes and loved them all. I have several others lined up to try soon. It is tricky to predict success solely on the basis of success with a sampling of a cookbook's recipes but the omens are good.

I made posole, a Mexican stew containing pork shoulder cubes, lots of shrimp, hominy, peppers, onions, garlic, and tomatoes. It cooked in the oven at 200 degrees for six hours and it was exquisite! -subtle yet earthy, a bonanza of good tastes that, because of the slow low temperature cooking, still were distinct. I've made the posole twice now, once for us, once for guests, and both times it has been a hit. The first time, I substituted garbanzo beans for hominy, and it tastes fine. The second time I used the traditional hominy (posole).

I have also prepared prime rib and mac and cheese using this book, and they were both better than I have achieved using other methods -a lot better. The mac and cheese was amazing. After hours of slow cooking in the oven, the kitchen smells heavenly and the taste is wonderful. It was even better than my wife's time honored recipe. I think she's going to convert to new techniques the next time she makes hers.

The author's comments throughout this book make sense -about the effects of temperature and moisture on the end product, about c0ooking in general. They resonate with me on several levels and by now I'm not a novice. The book is intelligently laid out, with attractive visual presentations of dishes, well explained recipes and intelligent sidebars on variant recipes and other matters.

I have a list of recipes yet to try. It includes a cheesecake that cooks in the oven overnight for eight to ten hours at 175 degrees and ends up, so the book says, creamy even at the edge, never cracked and never dry because never over-baked. There are carrots slow baked on top of coffee beans (three hours at 225 degrees), a turkey chili that looks to die for (eight hours at 200 degrees), a duck ragu with cherries over fettucine (the ragu cooks in the oven for seven hours at 250 degrees), borscht (6-1/2 hours, on the counter top at the lowest possible simmer), and fettucine with lamb Bolognese (250 degrees in an oven for six hours).

I will be using this book for a long, long time --and for good reason. Because cooking slowly makes sense: both in terms of the nutrients saved and the flavors amplified and made more intense and savory.

Mr. Schloss writes good books. In this one, he discusses the topic of slow cooking clearly and offers some excellent recipes. He makes a distinction between slow cooking and cooking in a slow cooker. Having done that, he provides guidelines for using a slow cooker to approximate the outcomes of stove-top or oven slow cooking and offers suggestions for converting some of his slow cooking recipes to slow cooker recipes.

put them in and leave them - my only problem is they take longer than
the 6 hours so no one knows when twe are going to eat - but if youre not on a timetable
then they are great.

The Book Doctors Recommend Most

This is the ideal book for the beginner and in my opinion a must-read. In the excellent translation by Robert O. Gould, "Crystal Structure Determination" by Werner Massa explains all the basics from symmetry in real and reciprocal space, over generation of X-rays and other practical aspects, all the way to structure solution and refinement. Massa keeps the book simple and understandable and uses mathematical formulae carefully and only when helpful or necessary.

I learned the basics of crystallography from the German original of "the Massa". Now that I am a teacher of crystallography myself, this is the book I recommend to my students.

excellent reference book

I found this book good for reference or to review concepts in crystallography. You need at least to have previous knowledge in the basic concepts to understand it. The book goes right to the point, explanations are short but clear. It is an excellent summary of the theoretical details to remember when solving an structure.

Library book worth buying for keeps

I am currently using the library's copy of this text and am buying it since it has been such a good resource. The chapters are in evening-sized portions, it's highly readable, and while there are pieces I would organize differently, sections are presented in an order that flows and makes good sense. Some information about the instrumentation may be out of date (not the theory behind it, of course, but details of its execution) and this is worth keeping in mind. I tend to read this text as my first dive into any topic and supplement with multiple other resources. My class also uses Stout and Jensen for assigned readings and I also go online and pull up all sorts of diagrams, tables, PDFs and powerpoints that give me a better understanding of, for example, the Ewald construction than Massa's very short description gave me. In other words, Massa's text is a really excellent way to get comfortable with a topic, but it must be supplemented. I do find it easier to read the same chapters of other texts after getting an introduction from Massa, and for me, at least, that acclimation process saves a lot of time.

Clear and concise. Finally a summary that gives you a basis to start your understanding of the true value Whole Life Insurance and what it brings to your financial table. If you can get over the propaganda that has been pumped into your head for years and come to the realzation that you need to take control of your financial life, then ths will be a good read. excellent view of Whole Life as an asset

Like the author says many financial houses don't what you to understand what is written in this book, because they have a vested interest in IRAs and 401Ks. However the author rightly points out that life insurance has nearly no chance of loss, and will always give a positive return. When dealing with a large insurer that's is more than 100 years old, it has weathered and survived all manner of depressions and recessions. The best part of a policy is that you can tap into the policy as needed or take a loan out on the policy - many times continuing to earn dividend while repaying the loan, like the author states you become your own banker. This book is very much recommended to understand how Whole Life's cash value can be utilized for far more than just a death benefit to pass onto ones heirs.

Great Primer on True Biblical Friendship

How Should We Develop Biblical Friendship? by Joel Beeke and Michael Haykin is part of the 12-booklet Cultivating Biblical Godliness series published by Reformation Heritage Books. This booklet is short at just 46 pages and looks at the Christian duty to develop biblical friendships.

I found this book to be very encouraging as I find myself in a new church home. The authors not only look at the art of building godly friendships, but also give practical steps toward deepening those friendships. In addition, they remind the Christian that "[a]s you strive to be a friend, you must recognize the mystery of how friendships come to pass. You cannot make someone be your faithful friend. God is Lord of friendship," (p. 22).

I recommend How Should We Develop Biblical Friendship? for all Christians. True biblical friendship is difficult to find in the frenzy of activities in most local churches. Truly close friends are few and far between, so cultivation of that true friendship is important. Beeke & Haykin quote Esther Edwards Burr to show the importance of the relationships we have here on earth: "True friendship is first enkindled by a spark from heaven, and heaven will never suffer it to go out, but it will burn to all eternity," (p. 11).

one of the most illuminating and relevant books ever written

"Loose Ends" is a must read for anyone interested in understanding human behavior. The paper on "Betrayal" is one of the great classics of contemporary literature. It is a must read for anyone who has the desire to learn more about life in general - no other book says what Hillman says here. The relevance to almost everyone's life is mind-blowing.
